In preparation for Valentine's Day I'm now ramping up the chocolate production. I currently have the 4-ounce Kindred Fire chocolate bars in the store - a sweeter-than-my-usual blend of cacao from Venezuela, Tanzania and Ecuador.
Up next is single origin Venezuela Sur Del Lago - and this is one of those situations where I want people to love the chocolate, but not FALL in love with it. I don't think I'll be able to get more of this one any time soon, so once this supply is gone - it's gone. By tomorrow I'll have a small supply of 2-ounce bars of unsweetened, 100% cacao, Venezuela Sur Del Lago for baking. They're $4.00 each and are very intense!
Dominican Republic will be next chocolate in my line-up, and it's a new one that I've not had before. If sales are good in February I'm hoping to get more Ecuador and Madagascar in stock.
Chocolate is a good antidote for these dark, rainy/snowy days. At this point I'm dreaming of an R&D trip to the Big Island of Hawaii to visit my cacao supplier just north of Kona. Hard labor helping with the harvest sounds pretty good right about now!
